Ingredients
- 1 packet (11.5g) sugar-free strawberry jelly crystals
- 1 packet (11.5g) sugar-free lime jelly crystals
- 1 packet (11.5g) sugar-free orange jelly crystals
- 3 packets (11.5g each) sugar-free lemon jelly crystals
- 250ml / 8 fl oz double cream
- 1 teaspoon vanilla essence
Instructions
- Prepare the colored jellies. Prepare the strawberry, lime, and orange jelly crystals separately, using 375ml / 12 fl oz of water for each.
- Set and dice. Refrigerate each jelly in a separate shallow dish until thoroughly firm. Once set, dice each into small cubes.
- Make the lemon base. Mix all three packets of lemon jelly crystals together with 685ml / 1 pint 3 fl oz of water and allow to thicken slightly.
- Add cream. When the lemon mixture is very thick but not yet firm, whisk in the double cream and allow it to thicken again.
- Fold and mould. Fold in all the diced colored jelly cubes and the vanilla essence. Pour into a decorative mould and chill until thoroughly firm.
- Unmould and serve. Once fully set, carefully unmould onto a serving plate and slice to reveal the confetti effect throughout.
